Paying tribute to Gaggan as he served his last meal in his iconic namesake restaurant yesterday. The Indian chef who broke the myth that 'Indian' food is equal to chicken tikka masala, naan bread, and thosai. A man who took the complexity of Indian dishes and dared to further play around with them, adding textural and visual drama. A man who held the position of Asia's #1 restaurant for four consecutive years, a feat no other restaurant has been able to do, let alone an Indian one.
Gaggan made it possible for a food editor like me to travel the world and talk to chefs, proud of my culinary heritage, now slowly being understood by the world. And despite his fame, he was always accessible, always ready to have a chat, as I realised when I interviewed him thrice over the years.
A meal at Gaggan's was not just a meal, it was a celebration, an experience. For all that, and more, thank you chef. Can't wait to visit Bangkok in Nov and see what you have in store for us.
